Black Spicy Chicken Noodle Soup

Oh, My God, it's already Sunday, yesterday my lunch is a bowl of delicious Quick Chicken Noodles and coincidentally all the ingredients for the recipe yesterday there are still more some that we can use for today's lunch. And my spices and herbs in the kitchen still complete, because a few days ago I've been shopping a lot of spices and herbs for my kitchen stock.

Nooo. This time, I want to cook the noodles with spicy gravy or some kind of noodle soup. This recipe idea is inspired from ramen noodles, you'll know ramen noodles right?? I'm 100% sure you already know ramen. But for the gravy from Black Spicy Chicken Noodle Soup, it's very special and different from any ramen gravy, I'll make a gravy with the taste of the spices Indonesia cuisine. I just give a simple name based on the color and the taste,LOL.
Any vegetable??
Yup, of course, but I just use simply boiled mustard green. But if you don't like the mustard green vegetable you could replace it with a type of vegetable you like such as tomatoes, carrot, Siu Pak Choy, Kai Lan or Lettuce.

And for the chicken meat, you could replace it with beef, lamb or even prawns. I think if we using prawns it will taste more delicious, wait no no no, but it's SUPER DELICIOUS lol. Next time I will use big prawns for this recipe and I will update it here in my blog.

Ingredients :
- 75 grams fresh egg noodles
- 40 grams chicken meat
- Green mustard vegetable to taste
- Half rod leaf leek
- 35 grams shallot
- 20 grams garlic
- 2 rods lemongrass
- 25 grams ginger
- 1 tablespoon coriander
- 2 pieces big red chili
- 1 teaspoon black pepper
- 1/2 teaspoon white pepper
- 3 tablespoons cooking oil
- 1.5 cup water
- 1/2 teaspoon M.S.G
- 1/4 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon dark mushroom soy sauce
- 1 tablespoon Kikkoman soy sauce
Directions :
- Cut the chicken meat into diced, into 2cm squares.
- Cut and slice the leaf leek.
- Cut green mustard vegetables about 3cm longs, then boiled with boiling water until cooked and don't forget to add a pinch of sugar and 1 tablespoon oil into boiling water, to make a green and shiny result.
- Black Spicy Seasoning : mix and mash 35 grams shallot, 20 grams garlic, 2 rods lemongrass, 25 grams ginger, 1 tablespoon coriander, 2 pieces big red chili, 1 teaspoon black pepper, 1/2 teaspoon white pepper, 3 tablespoons cooking oil, using a blender until smooth, you could add more cooking oil if the material is hard to blend.
Methods :
- Preheat 3 cups water, put the fresh egg noodles in then boil it about 6 minutes and put in the eating bowl.
- Heat 1 tablespoon cooking oil, put in the chicken meat then stir fry until half cooked, then followed with the blended black spice seasoning stir fry again until the color is changed to blackish brown over medium low heat.
- Pour 1.5 cup water, add leaf leak and marinate with 1/2 teaspoon M.S.G, 1/4 teaspoon salt, 1 teaspoon sugar, 1 teaspoon dark mushroom soy sauce, 1 tablespoon Kikkoman soy sauce, then simmer about 5 or 10 minutes. If you fell less flavor you can add more seasoning such as salt or Kikkoman soy sauce.
- And the last step is to pour the black spicy chicken gravy into a boiled noodle, voila it's READY TO SERVE.
