Chicken Soto Soup (Soto Ayam)

CHICKEN SOTO SOUP aka SOTO AYAM




Soto Ayam?? is that a common chicken soup?? of course not, this is special chicken soup from Indonesia. Soto Ayam is including a clear thin soup but I think the colors little bit yellow. The yellow color is caused by some herbs. In Indonesia itself, there are several kinds of Soto depends on it's own regions. There are Soto Daging Sapi from Madura and Soto Ayam from Lamongan, but i never knew who the creator of this soup actually and which region is the first who create this soup.


Chicken soto soup can be served with white rice or lontong, there are even some areas in Indonesia is served with plain rice porridge. How to make this chicken soto soup is very simple and quick, it's like my blog said "Simply Food Recipes" Lol. In order to make the gravy chicken soup taste better, you should use high-quality chicken broth, for me the key to the delights of this chicken soup is chicken broth and the second is herbs and seasonings.


I always share this simply food recipes to my friend who just learned to make chicken Soto Ayam soup, cause this is the basic recipe for chicken Soto Ayam soup. From this recipe, you could explore and expand it again to suit your taste by using herbs and seasoning that exist in your country.

Ingredients :




  • 2 oz shredded chicken
  • 3 oz cellophane noodles
  • 2 boiled eggs
  • 6 cups chicken broth
  • Shredded fried red onion for garnish
  • 3 pieces lime leaves
  • 2 pieces bay leaves
  • 1-rod scallion
  • 2 rods lemongrass
  • 1 oz galangal
  • 1/4 oz turmeric
  • 4 pieces candlenut
  • 1/2 ginger
  • 3 cloves red onion
  • 3 cloves garlic
  • 2 teaspoon salt
  • 1/2 teaspoon M.S.G
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1/2 cup cooking oil
  • 3 tablespoon cooking oil

Directions :

  1. COMBINE SEASONING : mash 1/2 cup cooking oil, 2 rods lemongrass, 1 oz galangal, 1/4 oz turmeric, 4 pieces candlenut, 1/2 ginger, 3 cloves red onion, 3 cloves garlic using a blender until smooth.
  2. Cut scallion about 1cm long
  3. Boil with water 3 oz cellophane noodles until supple and remove.


Methods :

  1. SOTO GRAVY : heat 3 tablespoons cooking oil in a pan, stir fry COMBINE SEASONING about 5 minutes with low heat, then pour 6 cups chicken broth add 3 pieces lime leaves,2 pieces bay leave and scallion, simmer about 20 minutes.
  2. Season to taste with 2 teaspoon salt, 1 teaspoon sugar, 1/2 teaspoon M.S.G, 1/2 teaspoon white pepper.
  3. Prepare a bowl dish, put in cellophane noodles, 2 boiled eggs, 2 oz shredded chicken and pour hot SOTO GRAVY, garnish with shredded fried red onion and serve.

Notes :

  • Use fresh chicken broth.
