CRISPY SKIN CHICKEN




Chicken !! 
who doesn't know chicken, we can create many types of cuisine from chicken right ?.
From the most simple, we can cook chicken by frying process only and it's called fried chicken, but the chicken what I mean here is a chicken that's been through the stages of the cutting process and sold in the supermarket, ok ? lol, I'm pretty sure you already know what I mean.


Fried chicken is a very classic menu and there have been many variants of fried chicken dishes and oddly enough, why we never get bored of eating chicken meat ? I'll pass on that question, maybe you all the food lovers could help answer this question for me lol.


You are free to use any types of chicken breed for this recipe, but it must be chicken with bone rather than fillet. Buy a fresh chicken and freshly cut, because if it's not freshly cut, the chicken texture skin looks not flexible and the final result will not crispy-crunchy like the fresh one.

Ingredients :



  • 1/2 chicken
  • 12 pieces prawn cracker
  • 1 1/2 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon sherry wine
  • 1/2 pan fried oil
  • 2 pieces ginger
  • 1 oz maltose
  • 1/4 teaspoon M.S.G
  • 2 scallions (green onions)
  • 1/2 teaspoon five spice powder
  • 1/2 teaspoon salt
  • 1 teaspoon spice powder
  • 1/2 tablespoon vinegar


Directions :

  1. Clean chicken, remove feet and eyes.
  2. Mix 1/2 teaspoon five-spice powder, 1/2 teaspoon salt, 1/2 tablespoon sherry, 1/4 teaspoon M.S.G, 2 scallions and 2 pieces of ginger, and rub chicken well.
  3. Put the scallions and ginger into a stomach and close the opening with a bamboo stick.
  4. Boil maltose with 1 1/2 cup water to dissolve, add 1/2 tablespoon ginger, 1/2 tablespoon sherry wine to boil. Then pour over chicken partly and boil partly to make chicken skin appear white, remove and hang in a windy place to dry for 2 hours.


Methods :

  1. Heat oil to half boil, place chicken into the pan and deep fry over low heat for 15 minutes till golden browns skin, remove and take off scallion and ginger from the stomach, cut the chicken into bite-sized pieces and arrange as an original chicken figure.
  2. Deep fry prawn cracker, then set around the plate.
  3. Garnish with prawns cracker and serve.
